Quiche Recipe with Fresh Veggie Goodness
Every family has their list of comfort food faves….ours is no exception. One of the winners from our homey list is this down and dirty quick quiche recipe.
Simple to prep – this can be made ahead of time and reheated – plus you can load it up with your favorite FRESH veggies. Broccoli, cauliflower, garden peas, jicama, yukon taters, red, green, gold peppers, heirloom tomatoes….you get the drift.

- 1 cup Mozzarella Cheese (1/2″ cubes)
- 1 cup Swiss Cheese (cube)
- 1/2 cup Guyere (cube)
- 1/2 cup Smoked Gouda (cube) or any mixture of cheeses that tickles your fancy
- 1/2 to 3/4 cup Panko Crumbs (or regular bread crumbs)
- 1 1/2 – 2 cup Veggies (cut into 3/4″ – 1″ pieces
- 1/2 cup Yellow Onion chop
- 1/4 stick Real Butter (cut into small pieces)
- 3 Eggs beaten
- Salt / Pepper ground
- optional: a sprinkle of nutmeg – for classic quiche flavor

- Add the bacon crumbles and mix well.
- Turn all into prepared pie crust – pat mixture down to even it out.
- Bake at 350F 40-45 min. until quiche top is lightly browned and bubbly. We call it ‘quiche on a couch’ because its fix’n and eat’n is just this laid back and easy.
- (Slide knife into quiche center – if it’s done cooking the knife will come out clean.)
