Yet another super simple recipe, and guess what? THERE’S BACON!!! This recipe is an excellent source of protein, and can be made healthier by using reduced fat cheese, corn instead of flour tortillas, and bacon that hasn’t been cured. Super simple, I usually make this if I have a friend stopping by for lunch. Quick, easy, and delicious!
Life has gotten quite busy at the Budget Betty homestead. So at the end of the day when everyone comes home its hard to want to get creative in the kitchen, we’re all usually all about cramming food down our faces and then unwinding a little bit before our embarrassingly early bedtime.
The problem is every recipe I have found usually takes a huge amount of work. I am a housewife, I should have plenty of time to spend in the kitchen making scrumptious dinners. Honestly, about 90% of my day is simply doing damage control on the house. I have a toddler who thinks he’s a sherpa and and that anything higher off the ground than 2 feet must be the Himalayas.
So I took a closer look and well, well, well, what do we have here? Some lovely chicken breasts. Hmm… Will this work? The only way to find out is to try (Plus I just like making sh*t up as I go)! Well I tried it and it worked well. Really well in fact. I took some in to work for a friend who refuses to eat pork or chicken and she LOVED it! Pretty soon she was paying me to make it for her when I would have to work weekends.
