You want Shrooms? Sweet!

Once upon a time, I was invited to a post-holiday potluck/Yankee swap soiree in which the details of the party weren’t exactly clear until the day before.  Well, they were clear to everyone but me.  I was in denial that I had to actually waste time cooking something that would be devoured within fifteen minutes, but fine, I’m game.  “Soooo whaddya want me to bring?” I asked the host.  “Hmmm how about stuffed mushrooms?” she said.  “Uhhhh what?”  was my response.  At that, I just sort of ya know…stared blankly at the world around me for a good ten minutes…accepting the fact that I had to freaking cook… stuffed freaking mushfreakingrooms. Long story short, I went to the sto (no that’s not a typo) to gather my ingredients.  Came home, plopped all the goods on my counter, and went to work.

  1. So ya cook the peppers and the onions….set them aside…then ummm spray a baking dish, brush some melted buttah on the shrooms, add the remaining ingrediants to cooked veggies, and smush it all into little balls inside the shrooms. Bake at 350 for fifteen minutes and Volia!
  2. Everyone seemed to be diggin’ on my shrooms, even though some didn’t think I really made them myself. But I did. My favorite part of this story is that I survived it.
