Cheesy Chicken Bacon Avocado Quesadilla Recipe
Yet another super simple recipe, and guess what? THERE’S BACON!!! This recipe is an excellent source of protein and can be made healthier by using reduced fat cheese, corn instead of flour tortillas, and bacon that hasn’t been cured. Super simple, I usually make this if I have a friend stopping by for lunch. Quick, easy, and delicious!
Some helpful tips- when cutting an avocado, to make it easier, slice avocado in half, around the pit, and then pull apart. Remove the pit, and slice avocado while still in the skin with a paring knife. Remove the good stuff with a spoon. Super simple and you don’t have a slimy mess all over the place!
I really love how crispy the bacon comes out when cooked this way. If you prefer rubbery pan frying is always an option, but it doesn’t mesh as well with the other textures in this.

Quesadillas

- 4 Flour Tortillas
- 4 Bacon Strips
- 1 Chicken Breast boneless, skinless, chopped
- 1 Avocado
- 1 cup Sharp Cheddar Cheese shredded
- 1 tbsp Butter
- Salsa and Sour Cream Optional

- Preheat oven to 375
- Place bacon on a cooling rack, then place on a cookie sheet. Put in oven WHILE THE OVEN IS PREHEATING. Bake for 10 mins, flip over, then bake for 5 more. Continue steps bellow while it's cooking.
- When there is grease at the bottom of the cookie sheet, spoon out 2 TBSP of bacon grease, and place in large skillet on medium heat.
- Place chopped chicken in skillet and sautee until cooked through. Rinse pan of grease.
- By now the bacon should be finished, remove from oven and crumble. Set Aside.
- Melt butter in the rinsed skillet on medium heat, and place tortilla in the skillet.
- When the tortilla starts bubbling, flip it.
- Place cheese, then avocado, bacon, chicken, and another final layer of cheese on half of tortilla.
- Once all ingredients are stuffed in the tortilla, fold the other side over, and flip it, causing what was the top layer of cheese to melt.
- Serve with salsa and sour cream if you wish.
