Dark Chocolate Cayenne Armageddon Cupcakes with Cayenne Cream Cheese Frosting
The Mayan Armageddon has come and gone without a single hitch or hiccup and life has moved on. So what does a girl do when faced with the end of the world? Make cupcakes, of course. Duh.
Last night, I decided on the eve of mass destruction to celebrate the potential carnage with spicy south of the border flavors and began making an experimental batch of Dark Chocolate Cayenne Cupcakes with Cayenne Cream Cheese frosting. I piped frosting in all the glorious colors of hell, fireballs, and brimstone. I added asteroid-like candies. I delivered them to all the friends who, like me, had survived the end of days. - 1 cup Sugar
- 1/2 cup Special Dark Chocolate Unsweetened Baking Cocoa
- 1 1/2 cup Cake Flour
- 1 tsp Cayenne Pepper*
- 2 tsp Cinnamon
- 1 tsp Baking Soda
- 2 pinches Salt
- 1 tbsp Pure Vanilla Extract
- 1/4 cup Vegetable Oil
- 1 tbsp Balsamic Vinegar
- Simple Syrup 1:1 ratio
Ingredients

- Preheat oven to 350 F
- Line cupcake tin with paper cupcake holders, spray lightly with no-stick spray
- Combine all ingredients EXCEPT simple syrup in a large bowl and blend until smooth
- Spoon into cupcake holders
- Bake 20-25 minutes
- Set cupcake tin on a wire rack
- Drizzle simple syrup over each cupcake
- Let cool for 10 minutes
- Remove cupcakes from tin to cool completely

- 1/2 tsp Ground Cinnamon
- 1 pkg Cream Cheese softened
- 1/2 cup Unsalted Butter softened
- 4 cups Confectioner's Sugar
- 1/2 tsp Vanilla Extraxt
- Gel Food Coloring red, orange, yellow
Ingredients

- Combine cayenne, cinnamon and confectioner's sugar in a large mixing bowl
- Slowly beat in cream cheese and butter until smooth
- Add vanilla extract until blended thoroughly
- Divide frosting into 3 portions
- Color each portion with a different food coloring
- Place frosting into pastry piping bags with appropriate tips and begin decorating
