Chocolate-Dipped Peanut Butter Cookies
Aaah, the sweet taste of childhood treats at grandmother’s house on cool autumn days. One of my favorite “grandma treats” was always her peanut butter cookies, combined with a tall, cool glass of milk.
Combine your grandmother’s cookie recipe with fond childhood memories and a strong craving for Reese’s Peanut Butter Cups and you’ll end up with chocolate-dipped peanut butter cookies, as I did yesterday.
CHOCOLATE-DIPPED PEANUT BUTTER COOKIES
Pre-heat oven to 375. In large mixing bowl, combing all ingredients, except the chocolate, and mix on low speed until well blended. Form dough into large ball, wrap in waxed paper, and chill in refrigerator for one hour.
Form chilled dough into small individual balls, roughly the size of a quarter, and lay on cookie sheet. Press balls with a fork. Bake for 12-15 minutes. Remove from oven, let cool on cooling racks.
Slowly heat baker's chocolate in a double boiler over low heat until blocks are thoroughly melted. Dip each peanut butter cookie in chocolate and rest on waxed paper until chocolate has set.
