Ingredients
- 5 lbs Green Tomatoes
- 2 cups Onions diced
- 4 tbsp Fresh Ginger diced
- 2 cups Sugar
- 2 cups Cider Vinegar
- 2 cups Yellow Raisins
- 2 tbsp Mustard Seed
- 2 tsp Chili Flakes
- 2 tsp Salt
- 1 tsp Allspice
- 1/4 tsp Ground Clove
- 2 whole Cinnamon Sticks

Instructions
- Sweet Onions and Ginger in small amount of oil over low heat until soft.
- While Onions cook peel and dice Green Tomatoes.
- Add Spices, Sugar, Vinegar and Raisins. Simmer over low heat until reduced by half in volume.
- Add Tomatoes and cook until tender.
- Place 1qt of mixture and blend until smooth and return puree to Chutney for a thick and chunky consistency
