Ingredients
- 1 Large Onion diced
- 1 Large Green Pepper* diced
- 4 Garlic Cloves smashed or minced
- 2 Large Tomatoes diced
- 2 cups Black Eyed Peas (rinsed and soaked if you're using dried)
- 4 cups Water
- 2 cups Vegetable Broth
- 1 tbsp Smoked Paprika
- 1 Bay Leaf
- 1 tsp Oregano
- 1 tsp Thyme
- 1/2 tsp Sage rubbed
- 1/4 tsp Cayenne Pepper*
- Salt / Pepper to taste
- 8oz Applewood Smoked Cheddar cut into 1/4 inches

Instructions
- Heat about 2 Tbs olive oil in a large pot and add your diced onions and peppers, salt and pepper
- Add Blacked Eyed Peas, Garlic, Tomato, and spices, lower heat and cover for about 10 minutes
- Add in Water and Broth and simmer, covered for about 2 hours
- Top each portion with smoked cheese cubes immediately before serving
Recipe Notes
*I used Bell Pepper and omitted the Cayenne because my cubs don't always appreciate the heat, but feel free to make it as spicy or mild as you like, or generously sprinkle your own portion with Tapatio like I do
