Vegetarian Hoppin’ John
This meatless take on a hearty southern favorite uses creamy smoked cheddar cheese in place of ham to mimic the richness of the classic dish

Instructions
  1. Heat about 2 Tbs olive oil in a large pot and add your diced onions and peppers, salt and pepper
  2. Add Blacked Eyed Peas, Garlic, Tomato, and spices, lower heat and cover for about 10 minutes
  3. Add in Water and Broth and simmer, covered for about 2 hours
  4. Top each portion with smoked cheese cubes immediately before serving

*I used Bell Pepper and omitted the Cayenne because my cubs don’t always appreciate the heat, but feel free to make it as spicy or mild as you like, or generously sprinkle your own portion with Tapatio like I do
