Zucchini Refrigerator Pickles
  1. Slice zucchini to 18′ ( use mandoline if available)
  2. Cut onion into thin strips
  3. Lightly toss zucchini and onion with water salt.
  4. Cover mixture with water and ice cubes
  5. Chill for one hour, covered
  6. Simmer remaining ingredients for 5 minutes
  7. Allow to cool
  8. Remove zucchini and onion from water, strain and place in containers
  9. Pour cool brine over vegetables and cover
  10. Wait 24 hours before serving
